Butter Lettuce with Goat Cheese and Peaches
Take advantage of everything the farmer’s market has to offer this month with this delicious salad of Butter Lettuce with Goat Cheese and Peaches. Make sure to add in red peppers, cucumbers, chives, toasted almonds and a mustard vinaigrette, and you’ll find yourself going back for seconds and thirds. This salad is that super yummy. I am in denial that the summer is more than halfway over. Instead, I am trying to enjoy those precious moments that were certainly plentiful yesterday afternoon.
You can’t beat a day where you head to Rye Playland to enjoy the old time rides and take in the scenery with two kids in tow. As would be expected, we enjoyed some rides that spun around in circles and caught a kiddie rollercoaster or two. We filmed the kids on video in the house of mirrors and got some cute photo shots with them riding the little horses on the carousel.
Of course, I wasn’t necessarily planning on getting soaked on a log ride without seat belts. Nor did I expect to play 18 holes of putt putt golf for a fee of $3/person — a fair price given the quality of the course. I certainly wasn’t expecting to have a better than decent lunch on the Pier looking at the ocean. And you cannot underestimate my surprise as I watched my 3 1/2 year old take from the concession stand a monster serving of pink cotton candy that was almost as tall as he was and 3 times the size of his head. Onlookers stared and then giggled at the sight, as did I. Thankfully, he only ate about 1/3 of it….
But our day did not end when we left the Playland. To home we went to relax, catch some movies and grill out. We enjoyed a thinly sliced flank steak, some fresh corn from the Farmer’s market, some fresh mozzarella and tomatoes and finally this delicious salad that even the kids ate with its sweet peppers and peaches. Personally, despite the fact that it was only a salad, it was by far my favorite of the dinner dishes. You can easily substitute a nectarine for the peach. And if you don’t have cucumbers or chives, you can omit those (they aren’t necessary, but they add something if you have them). What you have to make sure is included is the peach/nectarine, goat cheese, red peppers and the almonds. The dressing here uses a a whole grain mustard along with olive oil and sherry vinegar. Its a nice complement to the sweetness of the salad and the nuttiness of the almonds.
- 1 head of butter lettuce or 6-8 oz container
- 1 peach or nectarine
- ½ large red pepper chopped
- ½ medium cucumber, peeled and chopped
- ¼ cup of goat cheese
- 1½ tbsp of chives, chopped
- ¼ cup almonds
- 1 tsp olive oil
- ¼ cup olive oil
- 3 tsp sherry vinegar
- 3 tsp whole grain mustard
- Salt and pepper to taste
- Combine salad ingredients through the chives in a large salad bowl.
- Heat a skillet on medium high heat with the almonds and olive oil. Cook until slightly browned and fragrant (akin to popcorn). Remove from heat and pour directly over salad.
- Meanwhile, whisk together vinaigrette ingredients. Dress gradually, adding about half the amount and then the rest according to taste. I think less is more.
