Ground Turkey Lettuce Wraps
This recipe of ground turkey lettuce wraps is truly a great one for weeknights. It can be prepped and cooked in about 20 minutes. It’s also low-carb, gluten-free (provided you use gluten free soy sauce) and healthy.
Inspired by a variety of recipes that I found online, this recipe is also quite simple. Just chop up and saute some shallots, garlic, green onions and fresh ginger in a skillet. Add in the meat until it begins to brown. Toss in some soy sauce and fish sauce and spices. Scoop into butter lettuce cups and top with cilantro. Easy peasy!
I must confess that I am desperately trying to take off some winter lbs, which seem to have piled on more than usual this year. I have plenty (and some legitimate) excuses for why they are there (including but not limited to stress, blowing my back out, long commute, work travel, more stress, oh and those two adorable kiddos running around demanding all my attention). But this is not the stuff you want to read about in food blogs. You want to read about good, healthy food made easy like these lettuce wraps.
But this background explains why I am making dinners that focus on lean proteins and vegetables and have things like ginger in them. Ginger is known for helping in digestion, circulation and reducing inflammation. I need all the help that I can get!
Note that I went light on the soy and fish sauce to reduce the overall sodium and and went strong on the ginger and added spices like the aleppo pepper, coriander and paprika to give it flavor. I prefer not to eat meat drowned in soy sauce, but you may want to add more to your taste.
Serve these lettuce wraps with some steamed green beans dusted with garlic powder, sea salt and dill and just a little olive oil and you’ve got yourself a week night dinner that will get you beach ready in no time. Or at least that is the hope.
- 1 large shallot, diced
- 2 tbsp ginger, grated
- 3 garlic cloves, minced
- 2 green onions, chopped
- 1 lb ground turkey
- ¼ tsp coriander ground
- ¼ tsp paprika
- ¼ aleppo pepper
- 1½ tbsp soy sauce
- 1 tsp fish sauce
- Butter Lettuce cups
- Chopped cilantro
- Saute shallots for 3-4 minutes until soft.
- Add ginger, garlic, green onion and saute for 2 minutes more.
- Add in ground turkey and saute until cooked through and beginning to brown (about 5 minutes).
- Add in soy sauce, fish sauce and remaining spices and cook for 1-2 minutes more until liquid cooks down.
- Scoop meat mixture into lettuce cups and top with freshly chopped cilantro.
