Grandma's Mashed Potatoes

Grandma's mashed potatoes with a little 2012 twist.
  • 2½ lbs of russet potatoes, quartered
  • ½ lb butter, softened and chopped
  • 2 tbsp horseradish
  • 4 tbsp sour cream (preferably reduced fat)
  • 12 oz cottage cheese (preferably low fat)
  • ¾ cup whole milk
  • sea salt and ground pepper to taste
  • paprika and ground pepper for a little dusting at the end.
  1. Bring salted water to boil. Add potatoes, reduce heat and simmer partially covered for 20-25 minutes until potatoes are tender.
  2. Drain and lightly mash with potato masher.
  3. Add butter, horseradish, sour cream and cottage cheese and beat with a hand mixer until creamy.
  4. Add milk gradually until blended smooth. (Up to now can be made ahead of time for up to 1 day).
  5. Preheat oven to 350 degrees.
  6. Remove from refrigerator and bake for 40 minutes (10 more minutes if chilled).
  7. Sprinkle with paprika and ground pepper before serving.
