My daughter Sophie inspired this post of Sweet Grilled Peaches with Ice Cream and Mint. I asked her if she was going to pick any sort of ice cream treat, what would she like? She voted for a simple preparation of Breyers Extra Creamy Vanilla ice cream with fresh peaches. I couldn’t resist grilling them and topping them with a little sugar and mint.
We kicked off our labor weekend by grilling some halved and pitted peaches while playing an end of summer game of “bite bite” with her brother. Each of us chased one another around the porch with grill tongs, trying to pinch each other on the behind. Good times! Note: I recommend using a separate set of tongs, preferably very blunt, for this game that gets squeals every time.
Is it wrong to feel a bit of regret and nostalgia on this Friday of Labor Day weekend? I don’t know, but I do. Summer is officially ending. My daughter has started first grade this week, and my son is set to begin nursery school in September. Mornings are getting darker. Days are getting shorter. In the days before kids, living in the city, and working late hours, summers whizzed by without note. But with the kids needing to swing nearly every night as we grilled our dinner and weekends packed with outdoor activities galore, the summer was duly noted and appreciated, particularly on days where it wasn’t raining!

- 4 peaches, halved and pitted
- 4 tbsp melted butter
- 16 scoops of Breyers Vanilla ice cream
- 1 tbsp
- 1 tbsp minted, chopped
- Melt the butter in a saucepan or microwave.
- Brush the peaches with butter
- Grilled on medium heat until lightly charred with grill marks and hot.
- Slice peaches and pprinkle with sugar and mint.
- Serve with Breyers Vanilla ice cream.

My perfect summer days were the ones spent swimming all day long. When dad pulled in the driveway, we’d run to the garden & pick snap peas for dinner, snacking on them as we went. We’d have dinner, then laugh or sing while we cleaned up. And end up playing a game on the screened–in porch, or chasing fireflies with the neighbor kids. Then it was off to bed to do the same thing all over the next day. We lived in our bathing suits!
