2 large cucumbers, peeled, deseeded, sliced in half lengthwise, then chopped in ¼ inch pieces
1 bunch of radishes, chopped
8 stalks of celery, finely chopped
4 green onions, finely chopped
½ cup goat milk yogurt
2 tbsp white wine vinegar
1 small garlic clove, minced
1 tbsp chives
2 tbsp fresh dill
1 tbsp fresh parsley
Sea Salt and Ground pepper to taste
Instructions
Chop the vegetables and place in a salad bowl.
Mix together the goat yogurt, whisking in the white wine to give it a slightly smoother consistency, add in the garlic, chives, dill and parsley and mix well. Let sit for one hour.
Toss the salad shortly before serving.
