Linguini with Capers and Parmesan

Ingredients
  • 8 oz dried pasta cooked to al dente
  • 2 tbsp olive oil
  • ½ tsp red pepper flakes
  • 2 garlic cloves, minced
  • 1 small shallot, minced
  • ¼ cup capers
  • ⅓ cup panko
  • 2 tbsp grated parmesan, plus more to taste
Instructions
  1. Cook pasta according to package directions.
  2. Meanwhile heat olive oil on medium high heat, adding in red pepper flakes, garlic, shallots, and capers. Saute until shallots and garlic are softened and just begin to brown.
  3. Add in panko and cook until toasty.
  4. Toss with the pasta and freshly grated parmesan.
