Skirt Steak Fajitas

- 2 red beller peppers, cut in long strips
- 1 red onion, cut in long strips
- 2 tsp olive oil
- 10-12 flour tortillas or 20-24 corn tortillas
- 2½ lbs skirt steak
- Rockin Guac
- Tomato Salsa
- Black Bean and Corn Salad
- Mexican Queso
- Creme Fraiche
- Stir fry the onions and peppers in a pan on medium high heat until onions become translucent and peppers soften. Transfer to serving dish.
- Heat oven to 250 degrees and warm tortillas. Serve warmed flour or corn tortillas with grilled skirt steak.
- Let guests assemble their own fajitas, choosing from rockin guac, tomato salsa, black bean and corn salad, mexican queso and creme fraiche.
