Turkey and Two Bean Chili

A healthy ground turkey and black and red bean chili with a lot of flavor and a little kick. Reheats well!
Ingredients
  • 1 tbsp olive oil
  • 2 onions
  • 2 red peppers
  • 3 cloves garlic, finely chopped
  • 2 jalapeno peppers, fine chopped
  • 3 lbs lean ground turkey
  • 4 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp fresh oregano
  • 2 tbsp chopped cilantro stems
  • 1 tbsp paprika
  • 2 tsp cumin
  • 1 tbsp unsweetened cocoa
  • 1 tbsp sea salt
  • 1 tsp cayenne pepper
  • 1 tsp red pepper flakes
  • 1 tsp black pepper
  • 4 cups chicken broth
  • 28 oz crushed tomatoes
  • 10 oz tomato sauce
  • 1 can black beans
  • 1 can red beans
  • ½ chopped cilantro
  • Sour cream (reduced fat recommended)
  • Cheddar cheese (reduced fat recommended)
Instructions
  1. Heat 1 tbsp (or enough oil to coat pan) in a large pot.
  2. Add chopped onions and peppers and saute until softened, about 10 minutes.
  3. Add garlic and jalepeno peppers and saute for an additional 2-3 minutes.
  4. Next add the ground turkey along with the spices and cook turkey until no longer pink, about 5 minutes.
  5. Next add chicken broth, crushed tomatoes, tomato sauce and bring to a boil. Let simmer for 20 minutes.
  6. Add beans and simmer for at least an additional 20 minutes.
  7. Serve with chopped cilantro, sour cream and cheddar cheese)
