Chicken Thighs with Tomatoes and Shallots

Tender Chicken Thighs browned and then baked in a bath of tomatoes, shallots and white wine make for an easy dinner any night of the week.
Ingredients
  • 1 tbsp olive oil
  • 6 chicken thighs
  • 1 large shallot, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 cup of cherry tomatoes
  • 2 tsp fresh basil
  • 1 tsp fresh thyme
  • 1 bay leaf
  • ½ cup white wine
  • Ground sea salt and pepper to taste.
Instructions
  1. Preheat oven to 350 degrees.
  2. Brown chicken in hot oil in a small dutch, approximately 5-6 minutes.
  3. Remove chicken from pan.
  4. Add additional oil if needed and saute garlic and shallots until soft and translucent. Add tomatoes, herbs and wine. Return chicken to pot and bring to a simmer.
  5. Cover pot and put in oven at 350 degrees for 20 minutes.
