Tender Chicken Thighs browned and then baked in a bath of tomatoes, shallots and white wine make for an easy dinner any night of the week.
Ingredients
1 tbsp olive oil
6 chicken thighs
1 large shallot, finely chopped
2 garlic cloves, finely chopped
1 cup of cherry tomatoes
2 tsp fresh basil
1 tsp fresh thyme
1 bay leaf
½ cup white wine
Ground sea salt and pepper to taste.
Instructions
Preheat oven to 350 degrees.
Brown chicken in hot oil in a small dutch, approximately 5-6 minutes.
Remove chicken from pan.
Add additional oil if needed and saute garlic and shallots until soft and translucent. Add tomatoes, herbs and wine. Return chicken to pot and bring to a simmer.
Cover pot and put in oven at 350 degrees for 20 minutes.
