Roasted Pork Tenderloin

- ¼ cup olive oil
- 2 tbsp soy sauce
- 2 tbsp apricot jam
- 1 tsp rosemary
- 1 tsp minced garlic
- 1 tsp orange zest
- ¼ cup no pulp orange juice
- 1 tbsp dijon mustard
- 2 lbs pork tenderloin
- ¼ cup dry white wine (for deglazing)
- Combine all but last 2 ingredients in blender.
- Place pork in glass dish and pour marinade over the pork.
- Refrigerate and let marinate for 4-24 hours.
- Bring to room temperature.
- Preheat oven to 450 degrees.
- Roast for 25 minutes.
- Transfer pork to cutting board and let rest for 10 minutes.
- Optional: deglaze pan with white wine to form sauce and pour over the pork.
