Slow-cooked "Kitchen Sink" Pasta Sauce

A slow-cooked pasta sauce of ground beef and pork and vegetables in a tomato sauce with a touch of cream
Ingredients
  • 2 carrots, peeled and chopped
  • 2 celery stalks, peeled and chopped
  • 1 large shallot, chopped
  • 2 large garlic cloves, minced
  • 2-4 pieces of turkey bacon
  • 1 lb ground beef
  • 1 lb ground pork
  • ½ cup white wine
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • ¼ tsp red pepper flakes
  • ½ tsp nutmeg
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 28 oz can of crushed tomatoes
  • 1 cup chicken broth
  • ½ cup cream
Instructions
  1. Saute carrot, celery, shallot and garlic in a saute pan or slow-cooker with a saute function for 10 minutes, until softened.
  2. Add turkey bacon, beef and pork, stirring until browned.
  3. Add wine and tomato paste and stir.
  4. Add in basil, red pepper flakes, nutmeg, sea salt and ground pepper until sufficiently mixed (Move to slow-cooker if necessary).
  5. Add crushed tomatoes and chicken broth.
  6. Turn slow cooker to low and let simmer for 8 hours.
  7. Add cream and salt and pepper to taste and let simmer for 10 minutes more.
  8. Serve hot over pasta, quinoa pasta or polenta.
