Slow-cooked "Kitchen Sink" Pasta Sauce

- 2 carrots, peeled and chopped
- 2 celery stalks, peeled and chopped
- 1 large shallot, chopped
- 2 large garlic cloves, minced
- 2-4 pieces of turkey bacon
- 1 lb ground beef
- 1 lb ground pork
- ½ cup white wine
- 2 tbsp tomato paste
- 1 tsp dried basil
- ¼ tsp red pepper flakes
- ½ tsp nutmeg
- 1 tsp sea salt
- 1 tsp ground pepper
- 1 28 oz can of crushed tomatoes
- 1 cup chicken broth
- ½ cup cream
- Saute carrot, celery, shallot and garlic in a saute pan or slow-cooker with a saute function for 10 minutes, until softened.
- Add turkey bacon, beef and pork, stirring until browned.
- Add wine and tomato paste and stir.
- Add in basil, red pepper flakes, nutmeg, sea salt and ground pepper until sufficiently mixed (Move to slow-cooker if necessary).
- Add crushed tomatoes and chicken broth.
- Turn slow cooker to low and let simmer for 8 hours.
- Add cream and salt and pepper to taste and let simmer for 10 minutes more.
- Serve hot over pasta, quinoa pasta or polenta.
